Chickpea Chocolate Chip Cookies

     Do you love chocolate chip cookies but are on a restrictive diet or are trying to eat less sugar? Well then these chickpea chocolate chip cookies are just for you! They are GF free and don’t have very much sugar other then the chocolate chips.
   The reason I make a lot of my recipes without gluten is because my sister has had to watch a lot of the things she eats due to an auto immune disease, and I like to try and make things she can eat. Also I like to have a less sugary snack around for myself and I discovered these are really good!  
  Now you may be thinking what are chickpeas and don’t they make it taste weird? Well I wondered the same thing when I first discovered a chickpea cookie. Chickpeas are a type of pea and can taste a little weird straight out of the can but if you add them to something or season them up they can be really good. So no these cookies don’t have a weird taste to me but maybe they will to you because every person is different. Also I have been known to like some odd things according to me family, haha!!  

   So the next time you go to the store pick up some chickpeas and try this recipe! That’s not the only ingredient in these cookies though so lets dive into the other ingredients you will need as well!

              Ingredients:
* Can of chickpeas ( we like to get an organic kind)
* peanut butter ( we get the all natural kind)
* maple syrup
* vanilla 
* egg
* baking powder
* baking soda
* salt ( we use himalayan salt)
* GF quick oats or rolled oats doesn’t really matter because they will be blended before you use them.
* dark chocolate chips

          Tools you will need:
* blender
* spatula 
* spoon
* bowl
* cookie sheets
* may need a can opener

   The steps to make these cookies are pretty easy.

First: You should turn your oven on to 350 so it can preheat while you are mixing up your cookies.

Second: Then you get your chickpeas and drain and rinse them. Then get put them your peanut butter, egg, maple syrup, and put it in you blender and blend it all together. Then dump it out into a bowl.

Third: You put your 1/2 cup of oats in a blender and blend until it is a flour consistency. Then add it to your blended ingredients and add your baking powder, baking soda, and salt as well. Mix until well combined. Then add your chocolate chip and mix again. Once it is all mixed get your baking sheets and put about 2 Tbs worth of dough 2 inches a part. It should make 16-18 cookies.

Fourth: Bake them for about 12-14 minutes. Then let them cool. Once they are cooled put them in an airtight container and store them in the refrigerator.

Ingredients

  • 1 can chickpeas (15.5 oz)

  • 1/2 cup peanut butter

  • 1/3 cup maple syrup

  • 1 tsp vanilla

  • 1 egg

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup oats ( then blend them )

  • 2/3 cup dark chocolate chips

Directions

  • First preheat your oven to 350 and while that is preheating open your can of chickpeas and drain and rinse them off. Then put them, your peanut butter, maple syrup, vanilla, and egg into a blender and blend it till it is completely blended. Dump it into a bowl once combined.

  • Then measure your 1/2 cup of oats ( it can be quick oats or rolled oats doesn't matter) and blend them into a flour consistence. Once they are blended add them to the other blended ingredients with your baking powder, baking soda, and salt. Mix until combined then add your chocolate chips and mix again. 

  • Once it is all mixed you can form your dough balls into a 2 Tbsp size ball and bake for 12-14 minutes. It makes about 17-18 cookies. 

  • To keep them the best let them cool and then put them in an air tight container in the refrigerator.
