Sweet Potato Cottage Cheese Bites

  Do you like sweet potatoes and cottage cheese like I do? If so then you have come to the right place! these sweet potato bits have a taste of sweet and savory! They even kind of taste like a cream cheese dessert if you are a cream cheese person!
 Whether you are looking for a yummy snack, or an appetizer to have at that lunch you are hosting you have chosen the right recipe. 

 I won’t keep you waiting anymore I will get on with telling you what you will need on hand to make these!

 Ingredients:

One medium sweet potato

Cottage cheese

Salt, garlic salt and pepper

Maple syrup

Olive oil

Walnuts

Cranberries

Tools you will need:

Cookie sheet

Knife

Oven

 When cutting the sweet potato in slices I cut them around 1/4 an inch thick. Then I put them in a bowl and put a Tablespoon of olive oil on and the seasonings and rubbed them around so that all the slices have some on. Then I put them on a cookie sheet to bake.

 Then while they are in the oven I will mix up my topping. Once they come out of the oven I would let them cool down just  a little bit so your topping doesn’t get to warm. 

 So without further ado lets get to making them!

Ingredients

  • 1 medium sweet potato

  • 1 Tbs olive oil

  • salt, garlic salt, and pepper

  • topping
  • 1 cup cottage cheese

  • 2 Tbs maple syrup

  • pinch of salt

  • walnuts

  • dried canberries

  • maple syrup

Directions

  • First off turn your oven on to 350 (i use air fry setting but if you don't have that just use regular bake). Then while that is preheating cut your sweet potato into 1/4 inch slices. (i had around 20 slices)

  • After your sweet potato is sliced put it in a bowl and sprinkle  the olive oil over it and mix them till they are all coated. Then sprinkle the salt, garlic salt, and pepper on to your satisfaction. Again mix it till it is evenly coated. Then lay the slices out on a cookie sheet and bake for 10-12 minutes on each side.

  • While your slices are baking put the cottage cheese maple syrup and pinch of salt into a blender and blend till smooth.

  • Once the slices are done take them out and let them cool for a little then once they are cooled distribute the cottage cheese and then put the chopped walnuts and dried cranberries on top.( you can drizzle maple syrup as well to add some more sweetness) and there you have it a yummy appetizer!
